I have been wanting to write a well researched and balanced article about milk for a while. However, milk is such a controversial topic at the moment (who would have thought!?) that producing such an article may well stay in the pipeline for quite some time.
Meanwhile, I have stumbled upon an excellent ‘overview’ of milk. This was on a website I haven’t used before, but I followed a link from Hurdlebrook’s website. The article is called ‘Milk – Nourishing or Nasty?‘. The author raises all the points that I would also like to raise.
Topics he covers are:
- A brief history of milk
- Lactose intolerance and the relationship with enzymatic activity
- How milk proteins from different animals and types of cows vary
- How pasteurisation changes the nature of milk
- What is homogenisation and how it affects milk
- Imitation milks
This sounds fairly complex but whilst some complex areas are covered, this is actually very readable.
